Even in the cold season, you can enjoy the popular fruits from your own harvest. To do this, you have to freeze the peaches and, if necessary, thaw them. So that nothing stands in the way of enjoyment at a later point in time, a few tips should be observed.
Can you freeze peaches?
At first, you tend to think that peaches cannot be frozen. The juicy consistency of the pulp does not look as if it could survive in the freezer for some time. The fear that the fruit will be mushy, bland or even boring after thawing is great. However unfounded. If peaches are treated properly before and after freezing, their taste and ingredients will remain. The consistency, too, as long as the fruit doesn’t have to spend ages frozen. The longer it stays frozen, the more unattractive they look. The taste also suffers at some point.
Or do you prefer to boil down?

Frozen peaches have a shelf life of six to nine months. After that, they can still consume, but they change a lot in terms of taste and appearance.
Freezing peaches whole?
It doesn’t make much sense to freeze peaches whole. For one thing, they cannot properly prepare this way. On the other hand, they have to shreds in some form for processing after thawing, so this procedure should carry out before freezing.
It is advisable to cut peaches into pieces or wedges before freezing them. This is mainly practicing in those cases in which the fruit will later process into a compote or uses for other desserts. Alternatively, they can make it into a puree before freezing. This is wonderfully suitable for sauces, sorbets, or for making jam.
Freeze peaches – with the skin on?
Even if it were so simple: peaches should never freeze with their skin on. Over time, this will give off bitter aromas to the pulp, which will then become quite inedible. But that’s not all: after freezing, the peach skin no longer has much in common with its proverbial delicacy. She becomes tough.
- Score the underside of the fruit crosswise
- Pour hot water over peaches; alternatively, blanch for a few minutes
- Peel off the skin with a kitchen knife
- Halve the fruit
- Remove cores
Now the peaches are either cut into pieces or wedges or pureed with the hand blender.
Freeze peaches – this is how it works
After preparation, the peach pieces or wedges place in freezer cans or bags and frozen in these containers. However, if you want to remove them individually, you have to do a little more work:
- Place the cut peaches on a kitchen board or baking sheet so that they don’t touch
- Place the board or tray in the quick freeze compartment in the freezer for an hour
- If they frozen, they immediately repackage in other freezer containers and quickly refrozen
If you want to freeze your peaches in pureed form, you can put the puree produced either in freezer bags, cans or in an ice cube maker, depending on the quantity.
Tips & Tricks of freeze peaches.
- Before freezing, add some sugar and lemon juice to the peach pieces so they keep their color.
- To defrost, place the peach pieces in a colander at room temperature.
- Peach puree can process directly frozen.
